It’s been awhile since I’ve made a recipe that I thought “Holy shit, the world needs to know about this.” The snack recipe below is just that. I had been thinking about making these ever since I made Alton Brown’s Ginger Almonds, from this episode as part of my plan to drop some pounds. Incidentally, everything from that episode I eat regularly now, most importantly The Buff Smoothie.
Anyway, his nut recipe was good; but I saw the potential. I adapted it into the recipe you see below. It’s just damn delicious. Make them, eat them, repeat. Thank me later.
Fish Nuts
1 tblsp olive oil
1 tblsp sesame oil
1 nut palm sugar (like the size of a nut)
1 Arbol chile seeded and chopped fine
Place these ingredients in a sauté pan and cook on low for 5 minutes, or until all the palm sugar is melted
1.5 lb almonds
Add nuts to pan and toast until lightly browned, stirring often. About 10 minutes.
1 tsp soy
1 tsp maggi seasoning
4 tbslp fish sauce
Add liquids to pan and cook until it coats the nuts, stirring often, about ten minutes.
2 tblsp ground kafir lime powder
1/2 tsp kosher salt
Toss the nuts with the powder and salt and then spread them evenly on a lined sheet pan. Bake at 250F for 20 minutes.
Cool to room temp, store in an airtight container
